Saffron rice with chicken and honey in the oven

Ingredients

Agulha Pampa - Arroz Oriente
  • 4 chicken thighs
  • 1 teaspoon sweet pepper
  • 1/2 teaspoon of turmeric
  • 1/4 teaspoon cumin
  • Salt and black pepper to taste
  • 1 tablespoon of olive oil
  • 1 tablespoon of olive oil
  • 1 onion
  • 2cm fresh ginger (optional)
  • 1 green chilli
  • 1 teaspoon of turmeric
  • 1 cup of Oriental rice
  • 1 teaspoon of salt
  • 1 tablespoon of honey

Decoration (optional):

1 lime
Fresh parsley or coriander

Preparation

  1. Start by seasoning the chicken thighs with the spices, salt and pepper. Add a drizzle of olive oil and spread well so that all the chicken is covered with the seasonings.
  2. Heat a nonstick skillet with a drizzle of oil. Fry the chicken until golden brown on both sides.
  3. Preheat the oven to 190ºC.
  4. In a pan put a drizzle of oil and chopped onion. Then add the grated ginger and chopped chilli. Also add the saffron and rice. Let it fry for about 2 minutes. Finally add 2 cups of hot water, salt and honey. Let it cook for about 8 minutes.
  5. Place the chicken over the rice and bake in the oven for about 15 minutes. Finish by decorating with lime slices and chopped fresh parsley.
