Start by seasoning the chicken thighs with the spices, salt and pepper. Add a drizzle of olive oil and spread well so that all the chicken is covered with the seasonings.
Heat a nonstick skillet with a drizzle of oil. Fry the chicken until golden brown on both sides.
Preheat the oven to 190ºC.
In a pan put a drizzle of oil and chopped onion. Then add the grated ginger and chopped chilli. Also add the saffron and rice. Let it fry for about 2 minutes. Finally add 2 cups of hot water, salt and honey. Let it cook for about 8 minutes.
Place the chicken over the rice and bake in the oven for about 15 minutes. Finish by decorating with lime slices and chopped fresh parsley.
