Start by placing the goatling in a container and cover with water. Add the sliced lemon slices, bay leaves and salt. Cover and leave in the fridge for 2 to 4 hours.
Mix all the ingredients for the marinade and blend with a hand blender or blender.
Drain the water from the goat. Remove the lemon and bay leaf. Add the marinade and leave in fridge overnight.
Preheat the oven to 200ºC. Place the goat on a baking sheet and bake for about 2 hours. Turn the meat occasionally.
Meanwhile prepare the rice. In a pan put the olive oil and chopped onion. Let it braise.
Add the chopped garlic and dried fruit (walnuts, almonds, pine nuts and sultanas). let it fry for 1-2 minutes and add the rice. Shortly afterwards add 2 cups of hot water and a pinch of salt. Cover and let cook for about 12 minutes.
Serve the roast kid with dried fruit rice. Decorate with rosemary and orange slices.
