In a pan put a drizzle of olive oil, chopped garlic and onion. Then add the wine, tomato and seasonings (salt, pepper, bay leaf and chopped chilli).
Grind the meats (already cooked) and chorizo in a mincer. Add to the pot with tomato and let it cook for 5 – 10 minutes.
Meanwhile, cook the rice in 2 cups of hot water. Let it cook on low heat for 8 minutes, or until the rice has absorbed most of the heat.

Place half the rice on a platter, place the minced meat on top of the rice and finally another layer of rice.
Bake in a preheated oven at 215ºC for about 15 minutes or until the rice starts to brown.
