Rice Balls with Parsley

Ingredients

Agulha Pampa - Arroz Oriente
  • 1 tablespoon of olive oil
  • 1 onion
  • 1/2 cup of Oriente Rice (or 2
  • cups – 370g – of cooked rice)
  • 1 + 1/4 cup of hot water
  • 1/2 teaspoon of salt
  • 2 eggs
  • 1 sprig of parsley (12g)
  • 1/4 cup of breadcrumbs
  • 1/4 teaspoon black pepper
  • Mini mozzarella cheese (130g)


To bread:

1 egg
1/3 cup breadcrumbs

To serve:

Tomato sauce

Preparation

  1. In a pan, sauté the chopped onion with the oil. Then add the rice and let it cook for 2 minutes. Finally add the hot water and salt, let it cook for about 12 minutes and reserve. Let it cool. Note: alternatively, you can use 2 cups of already cooked rice.
  2. Mix the rice with the eggs, chopped parsley, breadcrumbs and pepper. Mix everything very well.
  3. With your hands, shape balls with the rice and place a small piece of mozzarella cheese in the center.
  4. Dip the rice balls (already stuffed with cheese) first in beaten egg and then in breadcrumbs.
  5. Heat a small pan with oil and fry the balls until they are toasted.
  6. Serve the rice balls with tomato sauce.
