To bread:
1 egg
1/3 cup breadcrumbs
To serve:
Tomato sauce
Preparation
In a pan, sauté the chopped onion with the oil. Then add the rice and let it cook for 2 minutes. Finally add the hot water and salt, let it cook for about 12 minutes and reserve. Let it cool. Note: alternatively, you can use 2 cups of already cooked rice.
Mix the rice with the eggs, chopped parsley, breadcrumbs and pepper. Mix everything very well.
With your hands, shape balls with the rice and place a small piece of mozzarella cheese in the center.
Dip the rice balls (already stuffed with cheese) first in beaten egg and then in breadcrumbs.
Heat a small pan with oil and fry the balls until they are toasted.
