Oriente Basmati Rice fritters with codfish
- 3/4 cup cooked of Oriente Basmati Rice (125g)
- 80g of cod (cooked and shredded)
- 3 eggs
- 5 tablespoons of self-raising flour (40g)
- 1/2 onion (40g)
- 5g of chopped parsley
- Salt and black pepper to taste
- Oil (to fry)
- In a bowl, mix the eggs and flour well. Add the already cooked (and cold) rice, cod, chopped onion and parsley. Season with salt and pepper to taste.
- Put a frying pan on medium-high heat with enough oil to cover the fritters.
- When the oil is hot, add small portions of the batter to the fryer. Let it fry for about 2 minutes on each side, or until they are golden.
- Transfer to a plate with absorbent paper and they are ready.
