Oriente Basmati Rice fritters with codfish

ingredients

Arroz ORIENTE Longo Extra
  • 3/4 cup cooked of Oriente Basmati Rice (125g)
  • 80g of cod (cooked and shredded)
  • 3 eggs
  • 5 tablespoons of self-raising flour (40g)
  • 1/2 onion (40g)
  • 5g of chopped parsley
  • Salt and black pepper to taste
  • Oil (to fry)

Preparation

  1. In a bowl, mix the eggs and flour well. Add the already cooked (and cold) rice, cod, chopped onion and parsley. Season with salt and pepper to taste.
  2. Put a frying pan on medium-high heat with enough oil to cover the fritters.
  3. When the oil is hot, add small portions of the batter to the fryer. Let it fry for about 2 minutes on each side, or until they are golden.
  4. Transfer to a plate with absorbent paper and they are ready.
