Orient Basmati Brown Rice and Falafels

Ingredients

Basmati Integral Taj - Arroz Oriente
  • 450g pumpkin
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 1 tablespoon olive oil
  • 1 onion
  • 3 cloves of garlic
  • 1 cup brown basmati rice
  • salt to taste
  • 1/2 jar of chickpeas (boiled and drained) – 200g

To serve:

  • 1 chive
  • 12 falafels

Preparation

  1. Preheat the oven to 190ºC.
  2. Cut the pumpkin into cubes and place on a tray. Add olive oil, salt and pepper. Place in the oven to bake for 30-35 minutes.
  3. Meanwhile start preparing the rice. In a pan, sauté the chopped onion with olive oil. Shortly after, add the chopped garlic and rice. Let fry 2-3 minutes.
  4. Add 2 cups of hot water and a pinch of salt. Cover and let it cook over low heat for about 25 minutes.
  5. Add the chickpeas and roasted pumpkin to the rice. Let cook for another 8 minutes.
  6. In a separate frying pan cook the falafels.
  7. Serve the grain rice with the falafels. Finish with chopped chives (or chives).
