Cut the pumpkin into cubes and place on a tray. Add olive oil, salt and pepper. Place in the oven to bake for 30-35 minutes.
Meanwhile start preparing the rice. In a pan, sauté the chopped onion with olive oil. Shortly after, add the chopped garlic and rice. Let fry 2-3 minutes.
Add 2 cups of hot water and a pinch of salt. Cover and let it cook over low heat for about 25 minutes.
Add the chickpeas and roasted pumpkin to the rice. Let cook for another 8 minutes.
In a separate frying pan cook the falafels.
Serve the grain rice with the falafels. Finish with chopped chives (or chives).
