Mushrooms stuffed with Basmati Rice, nuts and parmesan

Ingredients

Basmati Taj - Arroz Oriente
  • 300g whole brown mushrooms
  • Salt and black pepper to taste
  • 2 teaspoons of olive oil
  • 3 garlic cloves
  • 1 sprig of rosemary
  • 1/2 cup basmati rice
  • 1 cup water
  • 1/3 cup walnuts
  • 3 tablespoons grated parmesan cheese

Preparation

  1. Preheat the oven to 190ºC.
  2. Carefully, with a coffee spoon, remove the inside mushrooms. Chop the stuffing and Reserve.
  3. Place the mushrooms on a tray with a drizzle of olive oil, salt and pepper. Bake for about 10 minutes.
  4. Meanwhile, in a saucepan, place a drizzle of olive oil, chopped garlic and finely chopped rosemary. Add the chopped walnuts as well as the minced mushroom stuffing.
  5. Add the rice and let it fry for a minute. Then add hot water and season with salt. Cover and let cook over low heat for 10 minutes.
  6. Remove the mushrooms from the oven and fill with the rice. Finish with grated parmesan cheese. Take it back to the oven for another 10 minutes.
