Start by grinding the rice in a food processor until you obtain a fine flour.
In a bowl, mix the warm water with the yeast and sugar. Let it rest for 5 minutes.
Meanwhile, place the rice flour in a larger bowl and add the beaten egg, olive oil and salt.
Also add the water and yeast mixture and mix all the ingredients well. On a clean surface with a little flour, knead the dough for about 5 minutes.
Transfer the dough to a clean bowl with a drizzle of olive oil on the bottom and cover with a cloth.
Let it rest for about 2 hours.
Preheat the oven to 190ºC. Form small circles with the dough and stretch with a rolling pin to form the base of the pizzas.
Place tomato pulp and organs on the base. Then add the onion slices, olives and tuna (drained). Place in the oven for about 20 minutes.
