Mexican wraps with Oriente Basmati Rice

ingredients

Arroz ORIENTE Longo Extra
  • 1/2 cup Basmati Rice
  • 1 cup of water
  • 1 pinch of salt
  • 4 tortillas
  • 150g colored peppers
  • 1 teaspoon olive oil
  • 1/2 cup cooked black beans
  • 1/2 avocado
  • 1 lime
  • Coriander (to taste)

Preparation

  1. Start by preparing the rice. In a pot put the basmati rice with the hot water and salt. Cover and let cook over low heat for about 15 minutes.
  2. In a skillet put the olive oil and the peppers cut into strips. Season with a pinch of salt and cook for about 5 minutes.
  3. Grill the tortillas for 30 seconds on each side.
  4. Prepare the wraps. Place the basmati rice on top of the tortillas. Add the sautéed peppers and black beans.
  5. Cut the avocado into slices and also add to the wraps. Finish with chopped coriander and lime juice.
