Mexican wraps with Oriente Basmati Rice
- 1/2 cup Basmati Rice
- 1 cup of water
- 1 pinch of salt
- 4 tortillas
- 150g colored peppers
- 1 teaspoon olive oil
- 1/2 cup cooked black beans
- 1/2 avocado
- 1 lime
- Coriander (to taste)
- Start by preparing the rice. In a pot put the basmati rice with the hot water and salt. Cover and let cook over low heat for about 15 minutes.
- In a skillet put the olive oil and the peppers cut into strips. Season with a pinch of salt and cook for about 5 minutes.
- Grill the tortillas for 30 seconds on each side.
- Prepare the wraps. Place the basmati rice on top of the tortillas. Add the sautéed peppers and black beans.
- Cut the avocado into slices and also add to the wraps. Finish with chopped coriander and lime juice.
