ingredients

- 1 tablespoon of olive oil
- 1 red onion
- 1/2 red pepper
- 1 seedless chilli
- 1 tomato
- 1 + 1/2 cup needle rice
- 1 can of black beans (260g)
- 1 small can of corn (140g)
- 180g cheddar cheese
To serve:
- 1 avocado
- Parsley or coriander to taste
Preparation
- Chop the red onion and place it in a pan together with the olive oil.
- Let it sauté for 2 minutes and then add the diced pepper and chopped chilli. Add the diced tomato and cook for another 2 minutes.
- Preheat the oven to 190ºC.
- Add the rice and season with salt to taste. Cover everything with 3 cups of hot water. Cover and let cook for about 8 minutes.
- Drain the beans and add to the rice. Let it cook for another 4-5 minutes.
- Add the corn and mix with the remaining ingredients. Transfer the rice to a platter and cover with grated cheddar cheese.
- Bake for 10-15 minutes. Serve with slices of avocado and parsley (or coriander) to taste.
