Mexican-style Long Grain Roasted Rice

Ingredients
1 tablespoon of olive oil
1 red onion
1/2 red pepper
1 seedless chilli
1 tomato
1 + 1/2 cup needle rice
1 can of black beans (260g)
1 small can of corn (140g)
180g cheddar cheese
To serve:
1 avocado
Parsley or coriander to taste
Preparation
Chop the red onion and place it in a pan together with the olive oil.
Let it sauté for 2 minutes and then add the diced pepper and chopped chilli. Add the diced tomato and cook for another 2 minutes.
Preheat the oven to 190ºC.
Add the rice and season with salt to taste. Cover everything with 3 cups of hot water. Cover and let cook for about 8 minutes.
Drain the beans and add to the rice. Let it cook for another 4-5 minutes.
Add the corn and mix with the remaining ingredients. Transfer the rice to a platter and cover with grated cheddar cheese.
Bake for 10-15 minutes. Serve with slices of avocado and parsley (or coriander) to taste.
