Mexican-style Long Grain Roasted Rice

ingredients

Arroz ORIENTE Longo Extra
  • 1 tablespoon of olive oil
  • 1 red onion
  • 1/2 red pepper
  • 1 seedless chilli
  • 1 tomato
  • 1 + 1/2 cup needle rice
  • 1 can of black beans (260g)
  • 1 small can of corn (140g)
  • 180g cheddar cheese

To serve:

  • 1 avocado
  • Parsley or coriander to taste

Preparation

  1. Chop the red onion and place it in a pan together with the olive oil.
  2. Let it sauté for 2 minutes and then add the diced pepper and chopped chilli. Add the diced tomato and cook for another 2 minutes.
  3. Preheat the oven to 190ºC.
  4. Add the rice and season with salt to taste. Cover everything with 3 cups of hot water. Cover and let cook for about 8 minutes.
  5. Drain the beans and add to the rice. Let it cook for another 4-5 minutes.
  6. Add the corn and mix with the remaining ingredients. Transfer the rice to a platter and cover with grated cheddar cheese.
  7. Bake for 10-15 minutes. Serve with slices of avocado and parsley (or coriander) to taste.
