Long Grain Oriente rice with chickpea and cod

Ingredients

Agulha Pampa - Arroz Oriente
  • large piece of codfish (soaked)
  • 2 tablespoons of olive oil
  • 1 big onion
  • 2-3 garlic cloves
  • 3/4 cup of Long Grain rice
  • 1 pinch of salt
  • 1/2 cup chickpeas (boiled and drained) (100g)
  • 1 cup of spinach (50g)
  • 1 pinch of ground black pepper

Preparation

  1. Place the cod in a pan and cover with water. Bring to a boil, after the water boils, let it cook for 3 minutes. Remove the cod and shred. Note: reserve the cod cooking water.
  2. In a pan, sauté the chopped onion with olive oil. Then add the minced garlic.
  3. Add the rice and 1 + 1/2 cups of hot water to the pan (you can use the cod cooking water). Add the chickpeas and a pinch of salt. Cover and let cook for about 10 minutes.
  4. Finally add the cod and spinach chips. Finish with ground black pepper.
