- 1 chicken breast
- Juice of 1/2 lemon
- Salt and black pepper (to taste)
- 2 teaspoons of olive oil
- 1 onion
- 1 small carrot
- 1/2 teaspoon of turmeric
- 1/2 teaspoon of salt
- 1 cup of Oriental rice
- 1/2 cup of peas
- 1/2 cup sweet corn
- 1 tablespoon chopped chives or chives (optional)

Preparation
- Start by seasoning the chicken, cut into cubes, with lemon juice, salt and black pepper. Reserve.
- Chop the onion and cut the carrot into cubes. In a pan, place the onion to sauté with a drizzle of olive oil, then add the carrot.
- Also add saffron and rice to the pan, let it fry for 2-3 minutes and then add 2 cups of hot water and salt. Let it cook for about 8 minutes.
- Meanwhile, in a frying pan, put a little oil and the chicken cubes. Let it cook for about 5 minutes or until crispy.
- When the rice is almost cooked, add the chicken, peas and corn to the pan. Let it cook for another 2 minutes.
- Serve with chopped onion (optional).
