Chicken Rice with Peas and Corn

Ingredients

Agulha Pampa - Arroz Oriente
  • 1 chicken breast
  • Juice of 1/2 lemon
  • Salt and black pepper (to taste)
  • 2 teaspoons of olive oil
  • 1 onion
  • 1 small carrot
  • 1/2 teaspoon of turmeric
  • 1/2 teaspoon of salt
  • 1 cup of Oriental rice
  • 1/2 cup of peas
  • 1/2 cup sweet corn
  • 1 tablespoon chopped chives or chives (optional)

Preparation

  1. Start by seasoning the chicken, cut into cubes, with lemon juice, salt and black pepper. Reserve.
  2. Chop the onion and cut the carrot into cubes. In a pan, place the onion to sauté with a drizzle of olive oil, then add the carrot.
  3. Also add saffron and rice to the pan, let it fry for 2-3 minutes and then add 2 cups of hot water and salt. Let it cook for about 8 minutes.
  4. Meanwhile, in a frying pan, put a little oil and the chicken cubes. Let it cook for about 5 minutes or until crispy.
  5. When the rice is almost cooked, add the chicken, peas and corn to the pan. Let it cook for another 2 minutes.
  6. Serve with chopped onion (optional).
